This is a heavenly recipe for Champagne Fizz, with gin, lemon juice, superfine sugar and Champagne.

• 1 1/2 oz gin
• 1 oz lemon juice
• 1 tsp superfine sugar
• 3 oz chilled Champagne

Pour the gin, lemon juice and sugar in a cocktail shaker half-filled with ice cubes, and shake well.
Strain into a champagne flute, add champagne, and serve.

Serve in a Champagne Flute.
